Superhero Sandwich

The superhero sandwich is a super-sized hero sandwich perfect for a picnic crowd. Plus! The longer it sits, the better it tastes - without going soggy!

When wrapped tightly in plastic, this sandwich will keep refrigerated for up to 2 days. Remember to bring along a good bread knife on your picnic so that you can cut it into wedges just before serving.

9 in. (23 cm)round loaf crusty bread
3roasted red peppers
2tomatoes
1/2head, Romaine lettuce
1/2bunch, fresh basil
4 Tbsp.creamy caesar dressing
4.5 oz. (140 g)cream cheese
(or creamy goat cheese)
500 g (1 lb.)sliced deli roast beef
250 g (8 oz.)cheddar cheese, sliced

Slice roasted red peppers into thick strips (if using store-bought, pat dry first with paper towels). Slice tomatoes. Stack a few Romaine leaves on top of each other and slice into thin strips. Remove stems from basil and discard.

Slice the bread round in half horizontally. Tear out a good part of the bread's center, leaving a 1" thick shell.

Spread top and bottom of bread with caesar dressing. Spread cream cheese over the bottom. Cover with red peppers. Lay sliced roast beef over top. Then layer with tomatoes, basil, sliced cheese. Finish with romaine lettuce. Top with bread shell and press gently.

Cover tightly in plastic wrap and refrigerate. Slice into wedges when you arrive at your picnic destination.
